The most striking characteristics of Vietnam's gastronomy are the multiplicity of influences that its cuisine combines, its enormous variety of dishes and ingredients, and its extensive tradition. This also makes it so special and easy to prepare, since it seems that it has adapted to many cultures at the same time: the use of woks and chopsticks from China, or the cooking techniques of the French.
It is known for its widespread use of fish sauce, soy sauce, and hoisin sauce. Recipes for dishes from Vietnam use many vegetables, herbs and spices, some of them like lemongrass, lime and kaffir lime leaves. Across all regions the emphasis is always on serving fresh food.
The recipes
Nem cua: Fried rolls with prawns and pork, vegetables. Served with lettuce, mint and coriander.
